Brewing a Summer One-Hop Session IPA

Several months ago, when I was putting together my next bunch of brew days for my six week build-up towards summer inventory, adding a new one-hop Session IPA to the list was basically a no-brainer. I had really enjoyed all three of my former attempts (featuring Mosaic, El Dorado, and Equinox varieties), with the most-recent batch featuring Equinox being the definite winner of the bunch. With this beer, I wasn't simply extremely impressed by Equinox (which I definitely was!), I also felt like I had dialled in an overall recipe I was happy with for a hoppy and sessionable IPA.

But with my fourth Session IPA scheduled, which hop should be featured this time? I still had quite a few varieties on hand, and after a bit of thought, I decided to focus on yet another one that I hadn't used before. While hop characteristics definitely change when they're blended with other varieties, I always enjoy these one-hop experiments; I feel they really help give me a basic understanding of what one variety is all about. And if you can use this "research" to get a better idea on how to use the hop in future beers, with other varieties, even better!

One of the few varieties I had on hand that I hadn't used yet was Summer. A dual-purpose, low alpha-acid Australian hop, it appears to have been around since the late 1990s, although I get the impression that it's really only started seeing higher usage in North America over the last few years. I bought half a pound on a whim a few months ago and wasn't really sure what to do with it. While the descriptions you see online sound appealing - citrus, melon, apricot - it seemed upon further reading that this was more of a "mellow" variety. Nothing wrong with that in the right circumstances, but after brewing so many hoppy beers with prominent hops such as Amarillo, Simcoe, Citra, Galaxy, Mosaic, etc., I didn't want to combine it in a beer with other varieties that could simply over-power it. With the summer season fitfully approaching, at the time it seemed like the perfect opportunity to try the hop out: in a single-hop Session IPA that would - hopefully - let its characteristics become prevalent.


The recipe was extremely easy, since I took basically the exact same recipe for my most-recent Session IPA - Equinox - and simply scaled it up to 5.5 gallons and substituted in Summer. As mentioned above, I've been happy with the grist for this recipe. Keeping in a good majority of specialty malts, while not overdoing it with Crystal, keeps the body from being too thin, while at the same time avoiding too much sweetness. I increased the mash temp a little more this time to 156 F to boost the body even more; I had aimed to do this with my last Session IPA, but still only managed to hit 153 F, then.

Although the AA% is much lower for Summer than Equinox, I didn't change the quantities at all in this go-around; the bittering addition is with hop extract, and I was ok with the rest of the bitterness coming in a bit lower. While it's not exactly a hop monster, 6 oz in a 1.048 beer is a pretty healthy amount, in my opinion. I've had excellent results with these quantities, so I assumed that since these hops were fresh, 6 oz would be more than enough to provide a hoppy beer.

The brew day went fine; the mash temp came in on target, and the OG just slightly higher than what I had aimed for, at 1.049. I aerated with 60 seconds of pure O2, pitched some rehydrated US-05, and let fermentation go at room temperature, since it still wasn't very hot out (what a crappy June). Once fermentation was complete, I waited a few more days and then tossed the dry hops into the primary fermentor. Five days or so later, I racked the beer to a keg and started carbing.

Well. The first pull from the tap was quite disappointing. And subsequent pulls. This isn't a bad beer, per se, but I don't consider it to be a great Session IPA, by any means. The problem? It's really not that hoppy. I get a little citrus in the aroma, and maybe even less than that in the taste. If I didn't know better, I'd think it was a Blonde Ale that had been hopped slightly more than usual for the style.

I knew going into this that Summer was supposed to be subtle, but I think I was still expecting more. I don't mean to bad mouth it, I just wanted it to... come out a little more. Unless I got a bad batch from a bad crop, I feel like if you used this hop with something stronger, that it would just be steamrolled over and there wouldn't have even been a point in using it. That being said, I know lots of commercial breweries feature Summer in some really great beers; I'm thinking specifically of Whirlpool from Night Shift Brewing. This is one excellent APA (one of the best I've ever had), and apparently it is hopped with Mosaic and Summer. I'm not sure if that's equal amounts of each, but obviously these guys are putting it to good use. So, maybe it's me? Maybe this particular recipe doesn't work well with Summer... perhaps less specialty malts? If I used it again, I think I'd try it in an APA or even a lower-ABV IPA. Bump up the gravity, cut back on the Munich and Crystal, lower the mash temp a few degrees. I likely won't be rushing out to buy it again, though; I've already got a lot of other varieties that I love brewing with. Another thing about Summer - it ain't cheap.

In the meantime, I have an easy-drinking beer for the rest of the season, that is just a bit underhopped for the style. If you've had similar - or completely different - results with Summer, please post in the comments! I'm really interested to hear if this is an isolated incident.

Recipe Targets: (5.5 gallons, 80% efficiency) OG 1.048, FG ~1.013, IBU ~35, SRM 6.3, ABV ~4.6%

Grains:
2.9 kg (70.8%) Canadian 2-row
450 g (11%) Munich
450 g (11%) Wheat malt
225 g (5.5%) Crystal 40 L
70 g (1.7%) Acid malt

Hops:
Hop extract - 2.5 mL @ 60 min (or 14 g of a 10% AA hop variety)

Summer - 28 g (5.5% AA) @ 10 min
Summer - 56 g @ 0 min (with a 15 min hop steep)

Summer - 84 g dry-hop for 5-7 days (in primary)

Misc: 1/2 tab Irish Moss at 5 min

Yeast: US-05 Safale (1 package, rehydrated)

Water: Fredericton city water, carbon-filtered; 4 g Gypsum and 8 g calcium chloride added to mash

- Brewed on June 9th, 2015, by myself. 50-minute mash with 12 L of strike water, mashed in at target of 156 F. Mashed-out for 10 minutes with 4.5 L of boiling water. Sparged with ~4.5 gallons of 168 F water for final volume of ~6.75 gallons.

- SG high at 1.042 (target 1.039). 60-minute boil. Final volume on target of 5.5 gallons; OG a bit high at 1.049. Chilled to low-60s F, then poured into Better Bottle. Aerated with 60 seconds of pure O2, pitched rehydrated yeast at 64 F.

- Good fermentation over the next few days, airlock bubbling strong by the first morning. Temp reached as high as 70 F.

- 15/6/15 - Added dry hops into primary fermentor.

- 21/6/15 - Racked to CO2-purged keg, set in keezer to chill down. Started carbing the next morning.


Appearance: Pours with a moderate-sized, white fluffy head that shows surprisingly good retention. Body is a burnished gold color, with very good clarity.

Aroma: Biscuity, bready malt, about evenly-balanced with a mild, citrusy hop presence. I suppose the apricot I read about is there... but I don't think I would have picked up on it if I wasn't already looking for it.

Taste: Ditto for the taste of this beer; the malt character is quite pleasant, but the hop flavors are far too low, in my opinion. Medium-low bitterness in the fairly dry finish.

Mouthfeel: Medium-bodied, moderate carbonation.

Overall: A tasty beer, but not what I would consider a strong Session IPA; more of a slightly-hoppy Blonde Ale. Maybe I should have used more hops here, but I really don't think that would have changed much. If brewed again, I'd change the recipe's grist a little, make it a bit drier, but I've found this grist works very well for other varieties.

Brewing a 100%-Brett IPA (with Amarillo and Hallertau Blanc)


Despite my severe lack of posting lately, I was actually brewing quite a bit before summer began. Starting with my recently-posted Alpine Nelson clone, I brewed six times in six weeks. This may not seem like quite a feat for some of you out there (you know who you are), but for me to pull this off with the everyday-busyness of work, family, etc., I was impressed! I had planned this a few months ago, but wasn't too hopeful that I could make it work, let alone keep to my schedule, but somehow, I did. The choice to brew so much wasn't due to any particular reason, other than that I don't usually brew during July and August, other than once or twice - I'm often away when not working, and with much-warmer temperatures (and my fermentation chamber now acting as a keezer), it's more practical to brew during the rest of the year.

So, it was time to build up some inventory while I had the chance. As always, I had lots of ideas of beers to brew, but there was one "style" in particular that I had been wanting to tackle for awhile, but hadn't: Brett IPA. Not officially a style, per se, this type of beer is exactly what you would expect, an American IPA that is fermented completely with the "wild" yeast, Brettanomyces. Brett continues to increase in popularity in the brewing world, both in commercial breweries and among home brewers. I've had a few commercial versions of Brett IPA over the past year or two, but I've been doing more reading than drinking on the subject, when it comes right down to it. There's an entire chapter of Mike Tonsmeire's American Sour Beer dedicated to 100% Brett fermentations; the whole book is a great read, but this chapter in particular is very informative.

Something interesting about 100% Brett fermentations - despite what you'd first think, there's less funky character in a beer fermented completely with Brett, compared to when it's used alongside Saccharomyces strains. Because the Brett has access to all of the simple sugars available (no competition with other yeast strains), it doesn't ferment as many of the long-chain carbohydrates. Combine that with a large, healthy pitch of Brett, and there you have it: less of the esters and phenols you expect from a Brett beer.

On the bright side, the beer should be ready to package after several weeks, as opposed to the usual period of months that you see when Brett is used with other yeast. And when it comes specifically to IPAs and other hoppy beers, Brett is a good candidate for a 100%-fermentation, thanks to its well-known oxygen-scavenging abilities - technically, the hop character of the beer should last longer, since oxidation is minimized. And Brett IPAs can be damn tasty - the well-brewed ones have a wonderful blend of tropical fruit (especially pineapple), citrus, and barnyard funk. And while it's repeated quite often lately, I still feel the urge to make clear that Brett beers generally are NOT sour... Lactobacillus and Pediococcus (both bacteria) are responsible for souring in most beers.

So, recently I had to make an online order for some homebrew equipment, and when browsing through their inventory to see if I could get my order high enough for free shipping, I noticed that there were some new yeast strains available, including several Brett strains from The Yeast Bay. The one that interested me the most was their Amalgamation, a "Brett Super Blend" featuring no less than SIX different strains of Brettanomyces, which combine to create a "dry beer with a bright and complex fruit-forward flavor and aroma, accompanied by some funk on the palate". It sounded perfect to me for a Brett IPA, so I quickly ordered a vial.



When it arrived in the mail, it was time to begin making a starter to build up the cell count. As stated on their website, Yeast Bay's Brett vials contain only about 2 billion cells each; recommendations for how many cells to use in a 100%-Brett beer vary from normal ale pitching rates, to hybrid rates, to lager rates. I weighed the opinions and decided to go with ale pitching rates, which for a 1.057 beer is about 200 billion cells; so, I obviously had my work cut out for me! I also decided to overbuild and double the count to 400 billion cells, so that I could save some clean slurry for future batches.

Luckily for me, I recently obtained a stir plate... finally. No, I don't know why it took me so long; I'm usually pretty strict when it comes to yeast health, wort aeration, sanitation, etc. but for some reason all of my yeast starters over the past several years consisted of intermittent shaking. But this was a great time to finally step things up. According to Tonsmeire, a Brett starter should begin with a low volume of wort, so I pitched the vial into 500 mL and let it go on the stir plate for a week. This is a lot longer than your typical 1-2 days for Saccharomyces starters, and I'm not 100% sure that it's necessary, but Tonsmeire mentions that maximum cell density should be reached "in about a week", so I deferred to him. After the first week, I added another 2.25 L of wort, waited another week, then chilled and decanted.

With a healthy number of cells built up, it was now time to hammer out a simple recipe. A friend had recently brewed the recipe for Tonsmeire's 100% Brett Trois IPA, and I liked the simplicity of the grain bill for that beer, so I followed it almost exactly. It consists of a majority of 2-row, along with a healthy amount of Wheat malt (~20%); lots of IPA recipes contain a bit of Wheat malt in the grist, but this is higher than normal. The reasoning makes sense: unlike Saccharomyces, most (all?) Brettanomyces strains do not produce glycerol, a compound which increases the body and mouthfeel of a beer. Therefore, the idea is that adding Wheat malt, flaked wheat, and/or flaked oats to the grist will help boost the mouthfeel so that the resulting beer doesn't come across as too thin or watery. In this recipe, a bit of Carapils for more mouthfeel, and some Acid malt to lower mash pH round off the grist. I aimed for an OG of 1.057 - definitely not very high for an IPA, but with the possible high attenuation of Brettanomyces, I wanted to make sure the ABV didn't come out TOO high. The grains were mashed at 153 F; with the likely absence of glycerol, this higher-than-normal mash temp for an IPA (for me, anyway) was another attempt to help boost the body of the beer.

When it came to the hopping, I had - as usual - plenty of options to work with. I wanted to keep it fairly simple, with 2-3 varieties, tops. Looking at my inventory, I realized I still had some Amarillo to use up from an older harvest; luckily, I had used it fairly recently and knew that it was still smelling and tasting great. So, I decided to bitter the beer with a little hop extract at the beginning of the boil, and then throw in 2.5 oz of Amarillo for a hop steep at flameout, and another 2.5 oz after turning on the chiller. For the dry-hop, I was originally going to use Equinox (I've only used Equinox once, in a one-hop Session IPA, and I loved it), but at the last minute I changed to Hallertau Blanc. I bought a pound of this variety on a whim a couple of months ago; described as having aromas of passionfruit, grapefruit, pineapple, and lemongrass, it's a new German variety that shows they're starting to experiment with hop varieties that mimic the extremely fruity American varieties that are so popular today. Sounded like it would work great in a Brett IPA - and with Amarillo - so I threw in 4 oz for the dry-hop addition.

I brewed the beer in mid-May; everything went fine on brew day, and I aerated the wort with 75 seconds of pure O2. I was aware that higher oxygenation could also limit Brett character in a beer, but I was looking for a fast turnaround to preserve the hop flavor, so I was willing to take that risk. The wort was fermented in the low 70s F. As you would expect, warmer temps will result in more of the classic Brett characteristics you expect to see, but then you also run the risk of the beer having more off-flavors. I erred on the side of caution, pitching the yeast in the mid-60s and letting the temp rise to 70-72 F.

Fermentation was fast and healthy; I took a couple of gravity readings a few days apart after 2 weeks, and it seemed to have stabilized at 1.014. This was higher than expected based on the 85%+ attenuation for the Amalgamation that is stated on the Yeast Bay website; however, it appeared to be in the normal range when I compared to other homebrewed and commercially brewed Brett IPAs, so I was happy with that number. I then added the dry-hops into primary, and bottled the beer 5 days later. This is normally a beer I would keg, but I was curious as to how the aromas and flavors would change over a few months (assuming the Brett character would increase as the hops faded), and bottling was the best option for me, what with limited keezer space and all. A note about bottling 100% Brett beers: basically, use the same sugar calculations that you would for non-Brett beers, and just keep in mind that it may take a little longer than normal for full carbonation to be reached. Yes, I was slightly concerned about bottle bombs in a Brett beer with a final gravity of only 1.014, but I aimed for 2.2 vol CO2, and have been drinking it for 6 weeks now, and all seems good.

Speaking of drinking... this beer came out almost exactly as I was hoping it would, which is rare. As mentioned, I've never brewed with Hallertau Blanc before, and maybe I got lucky pairing it with Amarillo, but the fruitiness to this beer - especially in the first few weeks - was fantastic. Very tropical, backed up by a mild funk/barnyard that has been slowly becoming more prominent, as expected, as the beer ages. I find the beer very hoppy, while some people who have tried it don't find it very hoppy at all; they still enjoy it, but they've said that it's the funk that comes through most. And at least one beer friend thought that the beer could use a little more bitterness, but personally I'm happy with it right where it is. More detail in the tasting notes below, but I would easily brew this beer again, and I'm looking forward to trying the same recipe with different hop varieties in the not-too-distant future.

Not much more to say here; I fully recommend this Brett blend if you can get your hands on it, and it seems that Amarillo and Hallertau Blanc are a fantastic combination! Watch for future posts featuring this blend in the near future; I plan to do some experimenting with both 100%-Brett beers, and combinations.

- Brewed on May 19th, 2015, by myself. 50-minute mash with 15 L of strike water, mashed in at 153 F. Mashed-out for 10 minutes with 6.75 L of boiling water. Sparged with ~3.5 gallons of 168 F water for final volume of ~6.75 gallons.

- SG 1.049. 60-minute boil. Final volume on target of 5.5 gallons; OG a bit high at 1.058. Chilled to low-60s F, then poured into Better Bottle. Aerated with 75 seconds of pure O2, pitched half of yeast starter (~200 billion cells) at 66 F.

- Fermentation going strong by about 24 hours after pitching, kept up for several days before starting to slow. Temperature never got above 70 F.

- 2/6/15 - Added dry hops into primary.

- 9/6/15 - FG of 1.014. Bottled with table sugar to 2.2 vol CO2.


Appearance: Pours with a stark-white, medium-sized head that shows pretty good retention; fades eventually to 1/2-finger. Body is a light-golden color (lighter than the picture appears), with a permanent haziness.

Aroma: Huge wallop on the nose, lots of pineapple, tropical fruit, citrus, with a fair amount of barnyard funk. It all pairs together really well, IMO.

Taste: Again, huge; this is not a mild beer, but it works! As in the aroma, plenty of tropical flavors and funk, with a medium-light bitterness in the finish.

Mouthfeel: No worries about the likely lack of glycerol... this is a medium-bodied beer, quite creamy, with moderate carbonation. Smooth.

Overall: I really love this beer; it's almost exactly what I was hoping it would be when I put the recipe together. I'll likely brew it again with different hops, but I wouldn't be surprised if I come back to this exact recipe at some point again.

Brewing an Alpine Nelson clone


Alpine Beer Company's Nelson - a "Golden Rye IPA" featuring that amazing and delicious New Zealand hop variety, Nelson Sauvin - has always been on my wishlist of beers to try. I've had a few Alpine beers, and they were all excellent (especially Duet, an IPA which I've attempted to clone not once, but twice), and I've always heard rave reviews on Nelson, so of course I'd want to experience drinking an IPA featuring my favorite hop, from a highly-respected brewery. This is looking more likely now that Green Flash has purchased Alpine; during my two recent trips to Alpine, before the buy-out, I didn't happen upon Nelson anywhere. Now, I notice that Alpine beers are starting to pop up on tap at a lot of beer bars outside of California, such as many in Vermont; hopefully it's only a matter of time before we start seeing them in Maine.

In the meantime (and hey, it's not like I live in Maine anyway), there's only one way for me to try to experience Nelson... clone it! Or do what I always do, try to brew a close approximation of it. I was pretty lucky with my Duet clone; while Alpine's founder, Pat McIlhenney, didn't give me a recipe for Duet, he was nice enough to give me some tips as to the grain bill (the hop schedule was kind of easy, since it's well-known to be equal amounts of Amarillo and Simcoe). Soon after, I got the impression that I was really lucky to get any information at all; apparently Pat has a reputation for being quite secretive when it comes to specific details on his beers. I've been interested in brewing a clone of Nelson ever since then, but I didn't bother contacting Pat again... I didn't really want to push my luck!

Well, about four months ago I happened to stumble upon a Reddit post, "Who Needs Alpine When You Can Brew Nelson Yourself?", which included an extremely detailed recipe for, supposedly, a Nelson clone. I was skeptical... this recipe had exact amounts for the malts, and amounts and times for the hop additions. The author claimed that years ago, the recipe had been "coaxed out of Pat by some [Alpine] locals", and that it was supposed to be a very reliable recipe, when compared side-by-side to the real thing. Hey, that was good enough for me! Even if it wasn't Nelson (and I'd never know, anyway), I wanted to try this recipe. I really liked the look of it, and the large addition of Acid malt sure seemed to match up with what Pat mentioned in his Duet recipe (they use the Acid malt for, of course, mash pH adjustment purposes).

Looking over the recipe further, I admit I was quite shocked by how minimal the hop additions seemed. Nelson is hopped with Nelson Sauvin and Southern Cross (another NZ variety), but this recipe wasn't calling for a hell of a whole lot. Sure, the dry-hop addition is pretty hefty, but from the beginning of the boil till the dry-hop, there's only about 2.25 oz added. That's not a lot, especially compared to a lot of other recipes I've brewed. But, as I've pondered before on this blog, maybe more isn't necessarily better, so I decided to throw caution to the wind and trust the recipe, as-is.

The grist isn't quite as simple as a lot of IPAs out there. It's made up of a majority of 2-row, but there's also some Maris Otter in there. A healthy proportion of Rye malt is featured (it IS a "Golden Rye IPA", after all), plus some Cara-pils and Acid malt (depending on your water profile, you may want to decrease the amount of Acid malt included in the grist). I also threw in a small amount of rice hulls, just as a precaution against a stuck sparge. As expected, the mash temperature is fairly low, at 150 F; the Alpine hoppy beers I had were perfectly dry and let the hops do their thing, just as they should.

As I mentioned for the hopping, it's pretty low, at least in terms of kettle additions. A FWH addition of Southern Cross, a bit of Nelson at 30 minutes (I haven't done a 30-min addition in a while), a bit more Southern Cross at 15, and then 1.25 oz between the two at 5 minutes. No flameout-additions, so no hop stands/whirlpools. As you can imagine, the IBUs for this beer are pretty low - 45 - for an IPA of 7.5% ABV. But that's on a homebrew system; that's with 5 gallons of wort that takes anywhere from 5-20 minutes to chill down to pitching temps. I assume on a commercial system, the hops are actually in contact with hot wort for longer, and therefore the IBUs would be higher? Either way, I resisted temptation to add more hops, and just went with the original recipe. But it wasn't easy! The beer then has a single dry-hop of both varieties; maybe not the biggest I've seen, but at over 4 oz, it's definitely enough to pack a wallop (especially considering one of the varieties is Nelson, which is one hell of an expressive hop).

A few words on Southern Cross - like I mentioned, it's a New Zealand variety; I've never brewed with it before now, but I've heard/read good things. According to Bear-Flavored's Hop Cheet Sheet, its characteristics are listed as "lemon, lime, pine"; other sources state the same, and it appears to be a variety that has been around for awhile (since 1994). I was lucky enough to grab a pound of it online, solely for the purpose of brewing this beer.

Ferment in the high 60s F with California Ale yeast (or in my case, my usual substitution of US-05), and there you have it. The directions note to transfer to secondary before dry-hopping, and "rouse twice in 2 weeks", but I'm sticking to my usual dry-hopping method of 5-7 days. I also didn't bother racking from the fermentor to my dry-hop keg, since I planned on dry-hopping early, and with one addition, I have good results just throwing the pellets into primary. The only real difference with my recipe is the small addition of some CaCl2 and Gypsum, as usual, to boost the calcium levels. Together with the fairly-large addition of Acid malt, my projected mash pH came in at 5.3.

The brew day went off without a hitch; I followed the instructions in the recipe for a 90-minute boil, even though for a beer like this, I'd normally stick with my usual 60 minutes. Fermentation was fairly quick, visible activity not really lasting any longer than my typical 4-5 days when using US-05. After 10 days or so, I threw the dry-hop addition into primary, and after 5 days racked the beer into a keg and started carbing.

Well, turns out there was no need to be skeptical about this recipe... the beer came out delicious! It's definitely got low bitterness for an IPA, but that never really bothers me. There's enough to balance the malt character nicely; speaking of which, I love how this beer is just bready enough to show it's not ALL hops, and the rye gives a bit of a nudge to your tastebuds, too. The aroma is quite nice; I really like how the Nelson and Southern Cross work together. Nelson is usually so distinct with its tropical berry, white wine character, but the Southern Cross does an excellent job of rounding out the fruitiness, while adding its own lemon-lime character to the beer. Overall, this is an easy-drinking IPA (I've been drinking this beer for weeks now; in fact, the keg is about to kick, and it's held on amazingly well).

I just came back from a trip to Vermont, and while I drank copious amounts of Hill Farmstead and Lawson's, among others, I didn't see any Alpine in my travels. However, a friend who HAS had Nelson tried this clone, and while admitting that the bitterness was lower, thought that it tasted and smelled quite similar, from what he could remember. Either way, the recipe made a really tasty IPA, so if you can get your hands on both hop varieties, I'd recommend giving this one a try!

- Fermentation going strong by about 24 hours after pitching, kept up for several days before starting to slow. Temperature never got above 70 F.

- 20/5/15 - FG 1.011; added dry hops into primary.

- 26/5/15 - Racked beer to CO2-purged keg, set in keezer to bring temp down before starting to carb the next day.


Appearance: Pours with a moderate-sized, white creamy head that has pretty good retention. Body is light-golden coloured with great clarity.

Aroma: Big fruity blast on the nose; lots of tropical aromas in there, with a bit of rye in the background. No flaws that I can find.

Taste: Ditto, ton of tropical fruit, bit of rye spice in there, all finishing quite dry with a moderate bitterness in the finish that lingers slightly. In a word: juicy.

Mouthfeel: Medium-light bodied, moderate carbonation.

Overall: Great beer; nothing to compare it to, unfortunately, but I'm loving the juicy, fruity flavours and aroma in this one.

Brewing an Equinox One-Hop Session IPA

It's been awhile since my last one-hop Session IPA, and I've really enjoyed how the two I've brewed have turned out. The first attempt, Mosaic Session IPA, was my first time brewing with Mosaic; I loved what that hop brought to the beer - the aromas and flavors were amazing. The beer did come out a bit thin, however, so for my second attempt, El Dorado Session IPA, I increased the mash temperature from 149 F to 153 F, while using the same grist. While El Dorado wasn't quite as "powerful" a hop as Mosaic, it still contributed a really tasty orange-candy characteristic to the beer, and the higher mash temp definitely improved the mouthfeel.

Well, I'm ready for another try, yet again with another new, hot hop: Equinox. This hop really is quite new; I believe it's only been available commercially under the name Equinox for a year or so. I actually stumbled upon it in the fall when I was browsing new hop varieties online, and one of the flavor descriptors jumped out at me: green pepper. Other words used were quite familiar - floral, lemon, lime, tropical - but green pepper? Seriously? I was immediately curious if this was something I would pick up in a beer hopped entirely with Equinox. Granted, I didn't buy a pound of an expensive new hop JUST for this reason; I had read other good things about it, and some commercial beers have already included it both on its own, and combined with other varieties.

For the grist, I've left it exactly the same as the last two Session IPAs: about 70% 2-row, with some Munich, malted Wheat, and Crystal 40 L making up the difference (and some Acid malt for mash pH purposes only). The high percentage of specialty malts is to help give this light-ABV beer some extra body; in fact, this time around I decided to bump the mash temp up even higher, to 156 F. Yes, this seems high for an IPA, but other homebrewers have brewed Session IPAs with even higher mash temps and reported good results, so I thought I'd give it a try. The only other changes I made to the mash involve water chemistry: based on the success from my recent APA and IPA, I added 3 grams of Gypsum and 9 grams of calcium chloride to the mash, giving a final water profile of 153 ppm calcium, 187 chloride, and 74 sulfate. I really liked the creamy body and smoother bitterness in those two beers with these numbers; this is the type of mouthfeel I'm really aiming for in a Session IPA.

As for the hopping, I've settled on the following schedule for this style of beer: a touch of bittering at the beginning of the boil with hop extract (or any high-AA hop variety) to about 20 IBUs, then 20 g of the featured hop at 10 min, 40 g at flameout for a 15-minute steep, and a 60 g dry-hop for 5-7 days. I had moved things around for the El Dorado Session IPA, where the 10-min addition became 5-min, and the steep was shorter; I found this definitely affected the beer slightly - the aroma was great, but the taste was diminished.

Again, this beer was fermented with US-05, in the high 60s F; I'd love to try it with the Wyeast 1318 London Ale III that I'd been using, but alas the slurry from my last batch was gone. I highly recommend trying some other yeasts, though, if you have the chance.

The brew day went off pretty well. I was rushing in the morning, getting my daughter ready for daycare (don't judge; when I brew, I do it in the AM on a day where I don't work until 3 pm... less family time wasted!), and I missed my mash temp by 3 degrees. So, a mash temp of 153 F, just like before... oh well! Everything else went fine. The Equinox hops smelled amazing fresh out of the package, so I had high hopes for how the beer turned out.

And... it turned out pretty damned tasty, if I say so myself. I'm normally quite critical of my beers (I think), but I really enjoy this one. I think the recipe is right where it needs to be, in terms of malt background, hop presence, and mouthfeel (I still think a higher mash temp would make it even better). The Equinox is showcased front and center in this beer, and really lives up to its hype, in my opinion. It is definitely very citrusy and tropical; several beer geeks who have tried it have described it as "green"-tasting, which makes sense when you try it yourself. And yes, there IS a bit of green pepper in the aroma and flavor; would I have picked that out if I didn't know to look for it? Probably not. But I notice it now, and it actually works!

So, is Equinox worth tracking down? Like any new, talked-about hop, it's not easy to find, and it ain't cheap. But I recommend seeking it out; don't be afraid of the green pepper descriptions if you're not into that. I didn't think it would necessarily work, either, but it does, and it's certainly not a dominant flavor/aroma. I had purchased a pound, and split half, so I'm already down to little under 4 oz... but I'm quite curious to use Equinox with another hop variety or two. But...... which one?

- Brewed on Feb 10th, 2015, by myself. 50-minute mash with 9 L of strike water, mashed in at 153 F (target 156 F). Mashed-out for 10 minutes with 3.25 L of boiling water. Sparged with ~4 gallons of 168 F water for final volume of ~5.25 gallons.

- SG low at 1.036 (target 1.037). 60-minute boil. Flameout hops had a 15-minute steep before turning on the chiller. Final volume a bit high at ~4.15 gallons; OG a little low at 1.046. Chilled to low-60s F, then poured into Better Bottle. Aerated with 60 seconds of pure O2, pitched rehydrated yeast at 64 F.

- Good fermentation activity by the following afternoon; quite vigorous by the next day, reaching 72 F on the fermometer. Slowed down quickly after that. FG reading of 1.011.

- Dry-hopped directly in primary for 7 days, then racked into CO2-purged keg, set in keezer overnight to bring temp down. Set PSI at 30 for 24 hours, then 10.

When will this season end...
Appearance: Pours with a moderate-large, white, fluffy head; great retention, several minutes later it had barely receded at all. Sticky lacing left on the sides of the glass as it finally diminishes. Body is a burnished-gold color, with very good clarity.

Aroma: Beautiful and distinct aroma; includes citrus, tropical fruit, a touch of floral/spicy character, and a little green pepper. I want to say “green” overall, and others have described it as exactly that.

Taste: Everything translates over to the flavors, and it all blends together perfectly. The grist does a great job of backing up the hops and providing some body, without getting in the way of the Equinox. Finishes with a moderate, smooth bitterness. Very easy-drinking.

Mouthfeel: Medium-bodied, medium carbonation. Again, very smooth.

Overall: Great beer, probably my favorite of the Session IPAs I've brewed so far. I think the recipe is where I want to be, both grist-wise and hop-schedule-wise. Equinox is a very nice hop; interested to see how it will pair with other varieties.

Brewing an American IPA with London Ale III yeast and high chloride water

Not exactly the catchiest of titles, is it?

With my recent stretch of Belgian-inspired beers, it's time for another American IPA! Looking back at every American IPA I've brewed, it hit me that I've used either US-05 or Wyeast 1056 American Ale for fermentation every time. I have absolutely nothing against using a neutral American yeast for any hop-forward beer, but I thought it was time to try something different. Seeing that other homebrewers have had success with fermenting their IPAs "outside the box" - that is, with English yeast - I wanted to try the same. There's also quite a few other excellent commercial breweries that have an English yeast as their house strain: Hill Farmstead, Stone, and Firestone Walker, to name just a few.

Ok, let's work backwards and start with the yeast, then. There's a lot of English strains out there; I've used a few, some in English beers, and some in American hoppy beers (but not IPAs). Wyeast 1968 London ESB Ale is often used in homebrew recipes, including several clones; I can't quite put my finger on why I'm not a huge fan of this yeast, but I'm just not. Any beer I've brewed with it, American or English, has had a certain flavor that I'm not big on. I fully admit this could be due to something else in the recipe, or some mess-up on my part, but I've consistently been disappointed with it in my homebrew history. I've had better luck with Wyeast 1098 British Ale, especially in American beers. Definitely a more neutral strain in the English yeast family, 1098 is often thought to be as close to the Stone house yeast that you can buy commercially; I've heard some sources say 1968 is closer, but I'd definitely go with 1098 if you ever brew a Stone clone.

More homebrewers have been using Wyeast 1318 London Ale III in their hoppy beers lately. Thought to be the Boddington's strain (check out the Wyeast chart from mrmalty.com), I think what's led more and more people to this yeast is the rumor that it's also the same strain that Hill Farmstead uses; and if there's a shortlist somewhere with the top breweries that homebrewers want to emulate, Hill Farmstead is definitely on there. It's been a few years since I've had a HF beer; while I can't remember if Edward was the perfect hoppy beer, I definitely recall this it was extremely delicious. What I remember most, along with the beautiful hoppiness of the beer, is that it was somehow still very creamy and smooth. I don't know if this is due to the yeast strain they use, their water source/treatment, or a combination of both. I imagine it's both, along with proper transfer technique and whatnot (i.e. keep oxygen out of the picture as much as possible). When I read Derek's post (of bearflavored.com) about his experience with 1318, his description of the results having a "saturated, soft mouthfeel" immediately brought to mind my experience with Edward. So, time to finally give this yeast a try.

On to water chemistry. I won't try to get into the intricacies of this subject, here. Many others have written much more than I ever could, and much more eloquently than I could ever hope to do myself. In a nutshell, Shaun Hill has been saying for a few years now that chloride may be more important in water profiles for hoppy beers than most people realize. Certainly, the general consensus for years now has been to bump up your calcium and sulfate in your IPA's water, with no mention at all of chloride. More sulfate usually results in a drier, crisper beer, which is normally synonymous with IPAs; more chloride than sulfate is thought to give a "maltier" beer. But maybe in IPAs, "maltier" really means "smoother", as long as the beer is hopped appropriately (that is, lots of flavor and aroma additions)? I've been adding both calcium chloride and gypsum (calcium sulfate) to my hoppy beers lately; more to help decrease the mash pH than as a flavoring addition, but I was happy to try a different approach. So, with this IPA, I added a large amount of calcium chloride and a bit of gypsum, targeting a chloride level of close to 200, and sulfate at around 70 (based on levels Derek has aimed for).

Something else I've changed in my hoppy beers lately is the way I've dry-hopped and transferred them... sort of. Months ago, I read an excellent write-up (again, from Derek... homebrewer extraordinaire!) on a great method to dry-hop IPAs with no oxygen pickup or clogged kegs (now, that guy knows how to title a blog post!). Check out his post; basically, it involves the use of a "dry-hop keg" featuring two separate stainless steel filters (a small, narrow one that goes over the bottom ~4 inches of the dip tube, and another larger one, also encompassing the entire dip tube), and then transferring the beer afterwards to the "serving keg" by the use of two liquid QDs and some tubing. Pretty simple process once you purchase the equipment needed, and it makes sense that it should definitely minimize oxygen contact with your beer. I've followed this approach the past several batches; since I ferment in a Better Bottle, I still have to use an auto-siphon to transfer the beer to the dry-hop keg, but I'm working on other methods to further decrease oxygen exposure.

Before I continue with the recipe for this IPA, I'll mention briefly that I brewed an American Pale Ale recently that followed all three methods: high-chloride water, London Ale III yeast, and closed transfer when dry-hopping. I didn't post about it because it's a clone recipe (of sorts) that I vowed never to share, but I can say that I was very happy with the results. I had brewed the same beer last year with no water adjustments and with a different English yeast; this more-recent attempt came out much better - the hops popped more, and the bitterness was much smoother in the finish than before.

For the grist, I actually replicated the one used in my Russian River Row 2, Hill 56 clone (an all-Simcoe American Pale Ale). I really enjoyed that beer, and found that the combination of Pilsner malt and Maris Otter gave a nice, bready malt complexity while still allowing the hops to shine through. The only change I made was subbing CaraRed malt (~20 L) for Crystal 15 L, based on what I had on hand. I increased the amounts of each malt to give an OG of 1.062, but otherwise kept the percentages about the same as before.

I decided on three different hop varieties for this IPA; all hops that I've brewed with before, but never specifically used together. Two of them are of the newer, more-popular, and more-expensive varieties: Galaxy (an Australian variety), and Nelson Sauvin (from New Zealand). Nelson remains one of my favorite hops; I love how fruity it is, and at the same time... kind of dank. I've only brewed with Galaxy once, in an all-Galaxy DIPA; that beer kind of disappointed me, but I suspect it wasn't because of the hop variety. It's supposed to be an intensely tropical and fruity hop, and I know from drinking other Galaxy-hopped beers that it lives up to its hype. Stone Enjoy By is hopped with many varieties, but the heavy dry-hop is supposed to be with both Galaxy and Nelson; the few times I've had that beer, I've loved it, so I'm hoping both of these together in this IPA will work well. I also threw in a bit of Columbus at each addition, because... well... I like Columbus, too, and find that it can be a great supporting hop in lots of combinations.

Other than a small bittering addition at the beginning of the boil, with hop extract, I took the route of adding all hops from flame-out on: a 25-minute hop steep, and two dry-hop additions (one in primary, and one in the keg, as described above). I haven't completely given up on 5 or 10-min additions, but I HAVE been experimenting with the approach I've taken here, and can understand why some homebrewers (and professionals) prefer this method. I estimate the IBUs to come in around 70; a 25-min steep with three high-AA varieties comes in at a much higher number in Beersmith, but I suspect that whatever formula is in there is overcompensating?

Overall, the brew day went well... except, I had calculated for a 60-minute boil, and didn't realize until weeks later that I should have boiled for 90 minutes (well, I always do, anyway, when the grist contains pilsner malt). OG was a touch low, likely due to my volume being a bit higher than target, but fermentation took off well and was finished in several days. After 10 days total of dry-hopping, I carbed the beer and was drinking it near the end of February.

I have to admit, that while this beer is quite tasty, I'm slightly disappointed. I think I got my hopes up too much due to: a) the hop varieties I used, and the large amounts, and b) based on how much I enjoyed the APA I had brewed with the same yeast and water adjustment. To be fair, I find this beer has a good bitterness for the style, and remains quite smooth and easy-drinking; the higher chloride seems to provide a different mouthfeel - very creamy - than I'm used to with my IPAs. The Nelson Sauvin, however, appears to be overshadowed; there's nothing wrong with the hop aroma or flavor at all - it's very fruity, citrusy, and a bit dank - but the white wine/gooseberry/whatever-it-is-exactly that Nelson always contributes just isn't there. Not sure if this is because Galaxy is the more dominant hop of the two (not to mention the CTZ in there as well), or because the Galaxy hops I had were the freshest of the three in the recipe. Maybe it's both.

Whatever it is, the beer still came out very nice (other than the appearance... I have no idea why it's so dark and murky!), and I'll continue to make similar water adjustments in most of my hoppy beers. And I'll definitely be using the London Ale III yeast again; I think it's one of the best yeasts I've used in beers that showcase hops. If anyone else has any experience with this English yeast in IPAs, feel free to comment.

Flameout hops had a 25-minute steep before turning on the chiller. Final volume a bit high at 4.25 gallons; OG a little low at 1.060. Chilled to low-60s F, then poured into Better Bottle. Aerated with 75 seconds of pure O2, pitched yeast slurry at 64 F.

- Fermentation took off strongly by the next morning, with the airlock activity pretty much finished within three days. Temp reached as high as 72 F.

- 5/2/15 - FG reading of 1.011. Added 1st dry hops to primary.

- 10/2/15 - Racked beer to CO2-purged keg, added second dry-hops, purged again and set at room temp. Left for another 5 days, then set in keezer overnight to bring temp down and crash out hops.

- 16/2/15 - Transferred beer to serving keg via closed system. Set in keezer to and hooked up CO2.



Appearance: Pours with a moderate-sized, off-white head that has pretty good retention. Body is a murky, orangey-brown color, and very hazy. Not a pretty beer.

Aroma: Hop-forward - very fruity (kind of a mix of citrus and tropical) with a bit of dank mixed in. Not a lot of malt character there.

Taste: Again, lots of hops, with a mixture of tropical and citrus notes. The malt comes through more here in the flavor, with a pleasant supporting background without honing in on hop territory. Finished with a firm, moderate-high bitterness, but it’s all quite dry, smooth, and goes down easy.

Mouthfeel: Medium-bodied, with moderate carbonation.

Overall: Pretty good beer; I think the Galaxy is the dominant hop here, but being that it’s the freshest of the three, I’m not surprised. I don’t know why the beer is so dark and murky though...? Solid recipe, solid beer, but doesn’t quite impress me as much as I thought it would.

Tasting : Hop Swamp (American IPA)

I feel it's important to take two different approaches in brewing...

1) Spend some time re-brewing batches that you really loved, so that you can enjoy them again, but more importantly, gain practice at nailing down a few styles with limited (if any) batch variability;

2) Experiment.

Obviously, "experiment" can refer to any number of ingredients, techniques, etc. in brewing. It all applies; it doesn't matter if you're brand-spanking new to the hobby, or if you've been doing it for 20 years, or if you're Shaun Hill. Experimenting will make you a better brewer. And isn't becoming a better brewer ultimately what this hobby is all about (to those of us who aren't just doing it for cheaper beer, that is)?

Well, in early October I experimented with an American IPA that I referred to as a "Kitchen Sink" IPA... that is, I added four hop varieties (Amarillo, Belma, Centennial and Falconer's Flight) that were from the 2012 hop harvest. To be honest, it was just as much about trying to use up older hops as it was about experimenting with this hop mixture, but I was truly curious as to just how hoppy a beer brewed with 2012 hops would be. Keeping in mind they were stored properly (vacuum-sealed, in the freezer), and weren't visibly too old (brownish-yellow color, for example), the hops even smelled pretty good... but you could tell they weren't as potent as fresh hops.

All that being said, the beer came out about what I expected... tasty, and hoppy, but nowhere near as hoppy as it SHOULD be with such a large amount of hops. Obviously other factors can come into play, but I feel that hop age was the deciding element, here. The beer smelled terrific after I removed the dry-hops, and tasted pretty darned good once it was carbed... but it fell off quickly (much faster than other hoppy beers have since I started kegging). Now, it's in the "good but not great" category of IPAs.

So, unfortunately I can't really say yay or nay for this beer's recipe; I don't think it's a safe representation of how these hops work together. Let this little experiment be a lesson, kids: use your hops while they're fresh. Try your best not to over-order.

But, really, who are we kidding?


Appearance: Pours with a moderate-sized, off-white head, creamy, good retention. Body is a light orange color, and very hazy.

Aroma: Kind of a muddled hop aroma (citrus, orangey) with a supporting malty sweet backbone. I would prefer to have the hops more upfront. No real flaws, just a bit...

Taste: Ditto with the flavor. It’s not a bad IPA at all, I just feel that the hops aren’t potent enough, especially considering how many were added in this beer. A combination of citrusy and sweet, it’s a little TOO balanced. Medium bitterness in the finish.

Mouthfeel: Medium-bodied, with moderate carbonation.

Overall: A very decent IPA, but not a great one. I suspect the hop age is the most contributing factor to this.

Brewing a "Kitchen Sink" American IPA

It's inevitable when it comes to homebrewers who love hoppy beers - you will almost always have more hops than you need. I know, at first glance the idea seems completely crazy. But when you start buying one pound at a time of all these new, hot varieties (e.g. Azacca, Galaxy, Mosaic, Nelson Sauvin, Falconer's Flight, Belma), while at the same time buying up those tried-and-true varieties that you always want to have on hand (Columbus, Centennial, Citra, Amarillo, Simcoe, etc.)... well, they accumulate quickly.

And now the 2014 harvest is coming out! Trust me, you start to panic a bit, worrying you're going to miss out on Citra, or Mosaic, or whatever. You love these hops, and while you may not have a beer planned in the near future that involves them... what if you DO, eventually? And a lot of those varieties sell-out quickly, and then what are you going to do? Go a whole year without brewing with Nelson Sauvin? Uh-uh, I don't think so.

So, what happens? You start buying less food to store in your freezer, because space is being taken up by hops. However, while proper packaging and storage of hops can definitely extend how long they're good for, aroma and flavor components (not to mention bittering potential) are going to eventually fade over time. I brew a lot of hoppy beers (12 out of this year's first 16 batches had a good amount of hops, the majority of them significantly so), but I can't quite keep up with what's in my freezer. So, I decided to brew a new IPA, trying to make use of leftovers from - I'm ashamed to say - the 2012 harvest.

Before people start firebombing this blog, let me rush to say that these hops have indeed been vacuum-sealed and stored in my freezer, and I've made sure that all of them still look good and smell good. In fact, they smell pretty damned good; I'd never brew with spoiled hops just for the sake of using them up! Right now, brewing a beer like this came at a good time; I actually didn't have a long list of other beers to brew, at least not with yeast I have on hand (I have a couple of Belgian yeasts on special order, but they won't be here for awhile yet), so why not experiment a little?


I guess I should start with the grist. Nothing off the wall, here, I just put something together that would suit - hopefully - what I was looking for... a beer with a complementing malt character, but not a lot of specialty malts, letting the hops stay upfront. Mostly 2-row, some Maris Otter to give a bit more character, some Carapils and Caramunich II, and a portion of Acid malt. Mash at around 150 F to keep the fermentable sugars fairly high. Easy.

Now, the good stuff. Looking through my inventory, I had several varieties of hops from the 2012 harvest (meaning I bought most of them in early 2013, probably). I didn't want to just throw in everything that I had; more hops does not necessarily mean a better beer, and more hop VARIETIES doesn't mean better, either. I've had hops clash in homebrews before, and I've had commercial IPAs that have had so many hop varieties in it that the whole beer came out as a mess. Of course, there are many commercial IPAs available with plenty of different types of hops used in the brew, and they come out great. I guess the important thing is to experiment and try to learn from your mistakes.

So, I settled on four different hop varieties, all used at different parts of the brew for the most part. Just enough Centennial in a first wort hop (FWH) addition to give about 25 IBUs. A large amount of Centennial at 5 minutes and at flameout, for a hop stand; then, some Amarillo after the chiller was turned on and the wort temp dipped below 180 F. Two dry hop additions: one with just Belma, then Belma and Falconer's Flight for the keg-hop. All of this comes to the equivalent of just over a pound of hops for a 5.5-6 gallon batch (I scaled down to 4.5 gallons)... that's quite a lot.

The beer will be fermented with the mostly-neutral US-05, hopefully getting down to the low teens for a final gravity, keeping the beer quite dry. As mentioned, the beer will be kegged; extra-important here, I feel, because in my experience hoppy beers drop off much quicker when bottled. In a beer where the hops are older, I figure this will happen even faster than usual.

All of this is not something I'd jump to recommend. A tasty, hoppy IPA shouldn't really need over a pound of hops for a standard homebrew batch, at least not if the hops are fresh. The APA I brewed with only 4 oz of Simcoe hops (the Russian River Row 2, Hill 56 clone) came out very delicious and very hoppy; a lot of that was probably due to the freshness of the Simcoe. I'm brewing this beer mostly to use up these hops, and as a little experiment to the combination of these varieties. Hopefully the high amounts will help bring out some of their character, but it's possible that even with proper storage that this isn't going to happen. But I currently have a fairly good supply of beer on hand, so I don't mind using a brew day to test this out. These hops are only going to get staler, after all.

Misc: 1/2 tab Irish Moss at 5 min

Yeast: US-05 Safale, 1 package, rehydrated

Water: Fredericton city water, carbon-filtered; 3 g Gypsum and 2 g calcium chloride added to mash

- Brewed on October 8th, 2014, by myself. 50-minute mash with 14 L of strike water, mashed in at target of 150 F. Mashed-out for 10 minutes with 7.5 L of boiling water. Sparged with ~2.5 gallons of 168 F water for final volume of ~5.75 gallons.

- SG a bit low at 1.049 (target 1.051). 60-minute boil. Flameout hops had a 10-minute steep before turning on the chiller; second dry hops added shortly after when wort temp dropped below 180 F. Final volume ~4.5 gallons; OG low at 1.061. Chilled to 65 F, then poured/filtered into Better Bottle. Aerated with 75 seconds of pure O2, pitched yeast.

- Good fermentation activity over the next few days; beer temp got a bit warm, up to 72-74 F. Started slowing after 3-4 days, krausen dropping.

 - 18/10/14 - First dry-hop addition, into primary directly. FG a bit high, 1.015.

- 22/10/14 - Racked into CO2-purged keg (the "dry-hop keg"), added second dry-hops directly into the keg.

- 26/10/14 - Transferred beer to the serving keg after cold-crashing for a day, set in keezer and began carbing.

- 25/11/14 - Yep, hop freshness matters a lot. It came out pretty good, but far from great.

Brewing an El Dorado One-Hop Session IPA


Ever since my first foray into brewing a single-hop Mosaic Session IPA last November, I've really been anxious to try it all again, but with another hop variety. I really enjoyed what Mosaic brought to the table (such a fantastic hop), I liked how brewing solely with that hop really helped me identify what aroma and flavor characteristics it added to the beer, and on top of all that, I love a well-brewed Session IPA. I'm a huge fan of having a big hop presence without big alcohol... as long as it's done well. I've had some fantastic Session IPAs over the last year (it definitely seems to be one of the popular "styles" now for an increasing number of breweries), but I've had some disappointing ones, too. My only major complaint about my attempt with Mosaic was that the beer did come out a bit thin, so I hope to remedy that with another try... this time, featuring another fairly-new hop variety - El Dorado.

El Dorado became commercially available in 2010. Developed at CLS Farms in Washington state, it's a high alpha acid aroma/flavor hop variety that doesn't seem to have garnered as much popularity as some of the really big new hops, such as Mosaic, Nelson Sauvin, and Azacca. However, I had read some positive homebrewer notes about it online, with descriptions of tropical, citrus, and stone fruit, along with pear and, oddly enough, cherry or watermelon Jolly Ranchers (and this is from many sources). I had the opportunity a few months ago to buy a half-pound from the late-2013 crop, and couldn't resist (I'm very weak when it comes to buying hops). It looks like some breweries have tried brewing some beers with all El Dorado, such as Flying Dog, with an Imperial IPA in their Single-Hop series. Unfortunately, I have not tried any of these beers (aside: am I the only one that really despises Flying Dog's labels?).

Like I said, brewing a single-hop beer is a great way to feel out a new hop variety, but something you have to keep in mind is that brewing with one hop does not necessarily work out better than when you combine multiple hop varieties. I'm a big believer that adding too many hop varieties in one beer can easily result in a muddled mess, but there are plenty of beers out there that combine 2 or 3 varieties with better results than a similar beer with just one of the hops. But in this case, I really wanted to continue this experiment, and didn't have any other plans to use El Dorado in the near future, so I went with it. Just wanted to make clear that I understand the risk that comes with this... that is, brewing a beer solely with a hop that sometimes resembles Jolly Rancher candy.

For this recipe, I virtually duplicated the malt bill, but scaled it down to a 4-gallon batch. I thought this grist worked very well for the Mosaic Session IPA; it provided enough specialty malts to help bolster the body slightly, yet the beer didn't come out too malty or sweet. It had just enough malt character... mind you, yes, the beer was a bit too thin, so this time I went with a target mash temp of 153 F, compared to 149 F last time.

As for the hopping, with the Mosaic Session IPA I was worried after brewing it that maybe I had hopped it too-heavily, but I didn't find that to be the case when I finally tasted it. There was no heavy grassiness to the aroma or flavor at all; lots of hops, yes, but it was exactly what I was aiming for in that department. I made only a couple of slight changes this time around: same amounts, but I moved the 10-minute addition to 5 minutes, and steeped the flame-out hops for a shorter amount of time (10 minutes compared to 15 minutes). No real reason for these changes, I just wanted to try moving the hops a bit later, and felt a 10-minute steep would be enough for such a low-ABV beer (since you still get some bitterness when wort temp is above ~180 F).

Everything else is the same as well. Same yeast (US-05, going for neutral character here), same water adjustments (a bit of gypsum and calcium chloride added to the mash). The only big difference involves packaging; now that I have a kegging setup, I'm definitely going that route compared to bottling (as with the Mosaic Session IPA). Hopefully the keg-hopping and minimalized oxygen exposure to the hops (although to be honest, I still don't feel like I've perfected the procedure) will result in a really hop-fresh beer. Since I've started kegging, I haven't necessarily noticed a huge difference in this quality, but the hop freshness does last a lot longer compared to bottling.

If you happen to look up the recipe for my Mosaic Session IPA and compare it to the one below, note that this current batch is for 4 gallons, vs. the 5.5 gallons I typically have brewed in the past. This beer is currently carbing, so look for the tasting notes to follow soon. And once again, forgive me the lack of pictures in this post; summer is a distracting season, you know!

- Brewed on July 21st, 2014, by myself. 50-minute mash with 9 L of strike water, mashed in at 152 F, slightly below target temp of 153 F. Mashed-out for 10 minutes with 4 L of boiling water. Sparged with ~3.5 gallons of 168 F water for final volume of ~5.25 gallons.
 
- SG on target at 1.037. 60-minute boil. Flameout hops had a 10-minute steep before turning on the chiller. Final volume ~4 gallons. Chilled down to 68 F, then poured/filtered into Better Bottle. OG on target at 1.048. Aerated with 60 seconds of pure O2, pitched rehydrated yeast. Placed BB in laundry sink with some cold water to try to keep temp down.


- Vigorous airlock activity over the next few days; temp got as high as 72 F before finally settling down when active fermentation did.

- 30/7/14 - Racked to a CO2-purged keg, added dry-hops in a mesh bag and left at room temp.

- 6/8/14 - Removed dry-hops, set keg in keezer to bring temp down to the mid-40s before beginning to carb.


- 21/9/14 - Posted the tasting notes. Strong orange character to me; a very tasty Session IPA, but not a hop I would rush to use on its own again in the future.

Tasting : The Student (Societe Brewing The Pupil clone)

I'm a little late posting the tasting notes for this beer; I brewed it in late April and kegged it almost a month ago. Nothing extreme, by any means, but with it being an American IPA, I really wanted to get my impressions out there while the beer was extremely fresh. However, life can be busy, and I was a bit behind with some other posts, so for those of you who have been waiting to hear how this Societe Brewing The Pupil clone came out, I do apologize. On the bright side... it came out pretty great!

Everything seemed to go well with brewing this beer, from the brew day right down to the end of fermentation. The beer finished close to my target of 1.010 (final gravity was 1.011); Doug Constantiner, the brewer at Societe who gave me some very generous help constructing the recipe, listed the FG as 1.006, but I knew on my system I'd never get it that low with US-05 yeast. After posting the recipe I came up with, Doug suggested that if you can't get to 1.006, add some table sugar to the beer (in place of some of the 2-row base malt) to help get it down to his FG target. He felt that having this beer end up very dry was key.

Now that I've been drinking several pints, I definitely agree with his recommendation. The beer really did come out great; fantastic aroma and flavor of big, tropical fruit... the Nelson is definitely the dominant hop, but the Citra and Centennial work wonderfully to provide a background of citrus character. Mouthfeel is great - the beer is very smooth and creamy; very easy-drinking for its higher ABV. However, the beer could definitely be drier. It's not a sweet-finishing IPA, don't get me wrong (1.011 is hardly a high FG), but I remember The Pupil finishing very dry, but not with a bitterness that was astringent.

Whether you've had The Pupil or not, I recommend brewing this beer. If you're like me and have trouble reaching 1.006 in a beer that doesn't involve an addition of table sugar, take Doug's advice: drop some of the 2-row, and add some table sugar to compensate. Maybe start with 1/2 lb and go from there. That's what I'll be doing when (not if) I brew this beer again!


Appearance: Poured with a medium-sized, white creamy head. Pretty good retention, eventually settles to 1/2-finger size. Body is a light golden color, with pretty good clarity... a bit of haze.

Aroma: Wonderful aroma of tropical fruit; some citrus in there as well, but the gooseberry, tropical character of Nelson wins out. Not much in terms of malt character (a touch of sweetness in the background), but the beer doesn’t strike as harsh or unbalanced.

Taste: A very smooth-tasting IPA; while the tropical fruit character of the hops is what hits you first, the beer has a nice, balancing sweetness to it. Moderate bitterness in the finish at most, quite creamy. Could probably stand to finish a bit drier, but I like it.

Mouthfeel: Creamy, medium-bodied, with moderate carbonation.

Overall: Very approachable despite the calculated IBUs; an IPA I think non-IPA drinkers could really enjoy. If it was a bit drier in the finish, I think it would be near-perfect.

Brewing a Societe Brewing The Pupil clone


I've gone on (maybe ad nauseam) before about a couple of trips I've taken to San Diego over the past few years, and how fantastic the beer scene is there... of course, this is well known by any beer geek worth his/her salt, but you need SOME sort of opening to a blog post, right? You don't just want me to post a recipe, do you? Ok, maybe you do, but I can write what I want, dammit!

Now, if that didn't grab you, I don't know what will! But seriously, I've brewed several clone recipes of beers from breweries in California, some of which have turned out really great (namely Isles of Fortune, a Modern Times Fortunate Island clone, and two attempts (here and here) of Alpine Beer Company's Duet), and in a lot of cases I've been lucky enough to try the actual commercial beers. But, ever since my most recent trip to SD last September, there's been one beer that I've been more anxious to try to clone than any other... that beer is The Pupil - an American IPA from Societe Brewing Company, a fairly new brewery in San Diego.

A bit of info on Societe Brewing - the owners/brewers are Travis Smith and Douglas Constantiner, two guys that seem to be extremely passionate about beer, and have a pretty successful resume between the two of them, working/interning at highly-respected breweries such as Russian River, Pizza Port, and The Bruery. I won't regurgitate their story, but I recommend you read about the both of them here. The beers they brew mostly seem to be hoppy beers and Belgian ales; Societe has only been open for close to two years, but when I visited SD in September they already had a really good reputation, as I had heard about them online and knew to seek out whatever beers of theirs I could find.

Luckily, several of the beer bars I visited had Societe beers on tap (unfortunately, a planned trip to their tasting room didn't work out for me... still one of my major disappointments on that trip). I had three: The Apprentice, a really tasty American IPA; The Scrapper, a "San Diego Dark Ale" that you could probably consider as a hoppy American Brown, or maybe a Black IPA; and my favorite of three already-excellent beers, The Pupil. In an area with a seemingly-endless supply of fantastic hoppy beers, The Pupil was hands-down one of the best hoppy beers I had on this trip. Maybe even THE best. Intensely fruity in a tropical way, not overly-bitter, and extremely easy-drinking, this met the definition of a perfect IPA, in my opinion.

When I arrived home, it wasn't long before I was emailing Societe to ask them for help with a homebrew recipe for this beer. I didn't take my usual approach, where I try to do some research on my own to build up my own idea of a clone attempt, and then ask the brewer(s) for suggestions... no, I blatantly contacted them and told them how much I loved their beers, and asked if they'd help me out with a recipe for The Pupil in particular. Shameful!

Luckily for me, the people at Societe seem to be as nice as their beer is tasty... Douglas Constantiner responded very quickly, with a very-detailed recipe. Here was his full response:

Hey Shawn,

Thanks for the kind words.  Please see below for some notes and tips for The Pupil...

O.G.: 1.062
F.G.: 1.006
20% Malted Wheat
75% North American 2-Row
5% Carapils
Single infusion mash - 150degF (or whatever will get you about 90% attenuation or finish at 1.006).
I'm not sure about your water source but i suggest using CaSO4 and CaCl to your desired levels.
90 minute boil.
Bitter to about 30 BUs (Rager calculation will get you close to what ours is) with first addition - Magnum or other high AA hop or extract.
Bitter 20 BUs at the 20 minute mark - Citra and Nelson at a 1:2 ratio.
Go crazy at flameout with Centennial:Citra:Nelson at a ratio of approx. 1:2:4 - try to get 10-15 BUs from this phase. We whirlpool in our kettle so the hops are in contact with the wort for about another 40 minutes once we kill the steam.
Chill and ferment at 65degF with California Ale (White Labs 001 or Wyeast 1056).
When fermentation is complete, crash beer to 60 to drop yeast out of suspension and rack to a new vessel.
Dry hop #1 Centennial, Citra, and Nelson with the focus on nelson with about 3-5 days contact time.
Transfer beer again to get it off the dry hops and repeat the same process. Hold the beer at 65degF throughout the dry hopping phase.
Carbonate to 2.5 vol. of CO2.
I think that should cover it!  If you're not happy with 2 dry hops, do a 3rd.

What do you think... detailed enough? I would have been more than happy to put some work into this beer on my own, but hey, I'll gladly give this recipe that came straight from the brewer a try, first!

For the grist, I pretty much followed Doug's recipe, with two minor changes. First, I aimed for an OG of 1.066... I know my system, and have a good amount of experience with California Ale/US-05 yeast, and I've never had a beer drop as low as 1.006, even with very low mash temps. So, I bumped up everything to 1.066, and mashed a bit lower at 148 F to get a very fermentable wort. I also took away a bit of the 2-row and replaced it with a small percentage of Acid malt to bring my mash pH into a more desirable range (~5.5).

The first couple of hop additions were easy. I used hop extract at 60 minutes to get to 30 IBUs as directed, and then enough Citra and Nelson at 20 minutes to 20 IBUs. For the flameout addition, I went with the ratios that Doug suggested, except I divided the total addition into two - half at flameout for a 15-minute steep (I didn't think 40 minutes was necessary for my small system, and I was actually brewing with limited time anyway), then I turned on the chiller and added the other half when the wort temp was just below 180 F (above which hop isomerization occurs). On further thought, I actually wish I added MORE flameout hops; if I brewed it again, I would probably increase the total amount by 25-33%. I plan on doing two dry-hop additions as indicated below; I'll rack the beer into a keg when fermentation is complete, and keg-hop twice.

*Side-note: I love the smell of Citra and Nelson in the morning. Seriously, it's been a while since I've brewed with these hops, and I had forgotten how fantastic they are; they're definitely my two favorite hop varieties right now.

The rest of the recipe is pretty straight-forward... fermented with a neutral American yeast (US-05 in this case), in the mid-60s F if possible. Hopefully two dry-hop additions will do the trick; I've had success with this approach in the past. As long as fermentation takes off and stays strong, I don't think there will be any issue getting the beer down to a FG of 1.010... this is important with any good American IPA, but is especially essential for this beer, since The Pupil finishes nice and dry, and really allows the hops to shine. As you can probably tell from the grist, this is a light-colored IPA that doesn't involve a lot of Crystal malts... a result of the brewers' time at Russian River and Pizza Port perhaps?

I'll be sure to post tasting notes on this beer as soon as it's ready. Thanks again to everyone at Societe Brewing; from the initial email from Doug, to chatting with Mike about using some of their photos in the post, they've all been extremely friendly and helpful. I'll absolutely be dropping by their brewery and tasting room on my next trip to San Diego, and strongly encourage anyone else visiting the area to do the same!

UPDATE: After publishing this post, Doug got back to me and made a small suggestion... he feels that a final gravity of 1.006 or close is very important, so if you think you can't get down that low (as I did), replace some of the 2-row with table sugar. I had considered that, but eventually decided to leave it out. If you're brewing this recipe, however, I encourage you to follow his advice.

- SG a bit low at 1.053 (target 1.055). 60-minute boil (my fault; I had misread the email which clearly indicates a 90-minute boil). Added last hops at flameout and let them steep for 15 minutes. Turned on chiller; temp of wort was below 180 F within a few minutes, added second half of flameout hops. Final volume ~6 gallons. Chilled down to 64 F, then poured/filtered into Better Bottle. OG on target at 1.066. Aerated with 90 seconds of pure O2, pitched rehydrated yeast. Placed BB in room with ambient temp at 68 F.

- Vigorous fermentation over a 4-5 day period. After 10 days or so, FG measured at 1.011.

- 8/5/14 - Racked beer to CO2-purged keg, added dry hops in a mesh bag. Each addition for 3 days, then removed hops and hooked up to CO2 to carbonate.

- 16/6/14 - Tasting notes posted. This beer came out delicious, full of tropical fruit and citrus... the only change I'd make is to follow Doug Constantiner's later recommendation of adding table sugar to dry the beer out more.
